LE GOÛTER HYDRATANT DE L'ÉTÉ: UNE RECETTE DE CATHERINE CHARLES

A recipe from Catherine Charles , TCM practitioner, author and trainer in Chinese energy dietetics.

INTRODUCTION

Here's a quick, delicious, and hydrating recipe: perfect for quenching your thirst and perking up when it's hot and you don't know what to eat!

Accessible and easy to prepare: judge for yourself:

  • A strawberry jelly made with agar agar with refreshing properties.
  • Just cooked fruit.
  • Lotus seeds to keep with the theme of summer and the heart
  • And lots of coconut milk for even more hydration!

These four fruits and this seed together will help the body soothe after a day spent outside in the sun and in the heat. Replenishing fluids and energy… the perfect program to end a hot day.

INGREDIENTS:

250 ml of strawberry juice (or coulis)

1 heaped teaspoon of agar agar

1 apricot per person

1/2 peach per person

1 box of natural lotus seeds (or homemade cooked)

Coconut milk

RECIPE:

Strawberry jelly is easy to make in advance.

Mix the juice with the agar agar, boil for 3 minutes and leave to cool in a dish.

When it is no longer hot, place it in the fridge and after a while (overnight for me), cut it into the shape that suits you.

Sauté the previously chopped apricots and peaches for 30 seconds, add the lotus seeds, then the coconut milk to the switched-off pan.

Place everything in a bowl, with the strawberry jelly pieces on top and drizzle with coconut milk.

A FEW WORDS FROM THE AUTHOR: Catherine CHARLES

Passionate about the magic of Traditional Chinese Medicine, I practice Acupuncture, Chinese Herbalism and especially Chinese Energy Dietetics.

TCM helps you regain your personal balance and live life to the fullest. It reduces the effects of stress on digestion, sleep, and vitality. It soothes pain, restores energy if exhaustion threatens, and helps you return to a sense of calm if things are moving too fast.

Changing our relationship with food and considering it as allies, observing Nature manifesting itself in dishes, rediscovering a simple connection between ourselves and what nourishes us, feeling comfort in digestion and welcoming the Energy that rises...

This is what Chinese Energy Dietetics helps us to experience on a daily basis.

This practice is the first one I learned over 20 years ago. Today, I have the immense opportunity to teach this Dietetics to the general public and to TCM professionals.
