CATHERINE CHARLES' AUTUMN RECIPE
CREAM OF PUMPKIN, GINGER AND CORIANDER
A recipe from Catherine Charles, TCM practitioner, author and trainer in Chinese energy dietetics.
INTRODUCTION
It's the season of squash and the first frosts. Foods that are warm in nature and have a spicy flavor are to be favored. You have to take care of your lungs. So here is a perfect recipe for fall!
INGREDIENTS:
- Squash of your choice: pumpkin, butternut squash, squash, etc.
- Onion
- Fresh ginger
- Fresh coriander
RECIPE:
Cut (peel if necessary) an appropriate amount of squash, for the number of portions planned. Consider about 200g for 3 people. Cook in a little water, with an onion, pepper, a little chili, grated ginger (according to taste).
When cooked, mix, adding water, if necessary, season (salt or soy sauce depending).
VARIATIONS AROUND THE THEME:
One base, lots of options:
My first suggestion is to serve with soy sauce and fresh coriander (if you are in the early stages of a cold, it helps).
Another, more exotic suggestion: add a little curry, soy sauce, coconut milk and keep the coriander.
Japanese: kabocha, ginger, garlic, soy sauce with toasted sesame oil, chives and grated bonito.
If we lean towards Italy: salt, olive oil, grilled speck and fresh basil.
If you're going for something lighter: salt, vegetable cream, crushed (or flaked) toasted almonds and walnut oil...
If you are hungry: add chestnuts and grilled bacon shavings...
CHARACTERISTICS OF PLANTS IN TCM:
CORIANDER (leaf) - HU SUI, is of a warm nature, of a spicy flavor, with a Lung, Stomach tropism. It frees the surface in the initial stages of Wind attacks, it opens the appetite and dissipates food stagnations.
GINGER - SHENG JIANG is slightly warm in nature, with a spicy flavor, with a Lung, Spleen tropism. It drives away Wind and Cold, especially from the Stomach and Spleen. Anti-emetic. Warms the Lung, calms coughs.
